Birthday Cake Baked Oatmeal

Ingredients
  • 2 cups rolled oats (5-minute oats preferred, but 1-minutes is okay)
  • 4 scoops Herbalife Nutrition Formula 1, Cookies 'n Cream
  • 2 scoops Herbalife Nutrition Protein Drink Mix, Vanilla
  • 1 tsp baking powder
  • 473 ml (2 cups) low-fat milk or milk alternative
  • 1 tsp vanilla extract
  • 1-2 tsp almond extract
  • 1 cup grated apple (about 1 medium apple; leave skin on when grating)
  • 2 tsp lemon juice
  • 3/4 cup plain Greek Nonfat Yogurt (for topping)
  • 1 scoop Herbalife Nutrition Protein Drink Mix, Vanilla (for topping)
  • 1/4 tsp vanilla extract (for topping)
  • 1/8 tsp almond extract (for topping)
Instructions
  • Preheat oven to 350 degrees.
  • Spray an 8 x 8-inch baking dish with pan spray or wipe lightly with oil.
  • In a large bowl, toss together oats, Formula 1, Protein Drink Mix, baking powder and salt.
  • In another bowl, beat eggs, add milk, and extracts and continue beating until well combined. Stir in grated apple and lemon juice.
  • Pour egg mixture over oat mixture and stir well to combine. Pour into prepared baking dish and bake for 1 hour. Don’t overbake – oatmeal should still be moist. Let cool slightly before cutting.
  • For topping, whisk together yogurt, Protein Drink Mix, and extracts until smooth.
  • To serve, divide oatmeal into servings and top with topping.
  • To store, store oatmeal and topping in separate covered containers in the refrigerator.
