Developed by our team in Europe, this chilled summer soup brings some serious flavors to your table. This fresh vegetable soup is perfect for a hot day.

Chilled Mushroom Soup

4 servings
  • 2 tablespoons extra virgin olive oil
  • 100 g shallots, chopped
  • Pepper and a clove of crushed garlic
  • 250g mushrooms, chopped
  • 750 ml chicken or vegetable stock
  • 2 servings (52 g) Formula 1* Savoury Meal, Mushroom & Herb
  • 2 sachets (4 g) Microbiotic Max food supplement**
  • 1 serving (pack) (12 g) Protein Chips, Sour Cream & Onion
  • 1-2 tablespoons natural yogurt
  • Pour the olive oil into a saucepan over a medium heat. Add in the chopped shallots and season with a little salt and pepper. Stir to mix then turn the heat down to low and cook the shallots, covered with a lid for 7-8 minutes, until tender.
  • Add in the chopped mushrooms (they can be chopped in a food processor) and cook with the shallots for 8-10 minutes over a low to medium heat until they are well cooked.
  • Now add in the stock and bring up to the boil, allowing it to simmer for 20 minutes then take off the heat and allow to cool.
  • Once the soup has cooled, pour it through a sieve then whisk in the Formula 1 Savoury Meal and then gently stir the Microbiotic Max, and season to taste.
  • To serve, pour the soup into cold bowls and top with a blob of natural yogurt and a good scattering of broken up Protein Chips!

Susan Bowerman is the senior director of Worldwide Nutrition Education and Training at Herbalife. She also serves as the Vice Chair of the Dietetic Advisory Board (DAB). As a registered dietitian, she educates distributors about our global nutrition philosophy and is responsible for developing nutrition education and training materials. Bowerman earned a B.S. in Biology with distinction from the University of Colorado and an M.S. in Food Science and Nutrition from Colorado State University. She is a fellow of the Academy of Nutrition and Dietetics and holds two board certifications as a specialist in Sports Dietetics and in Obesity and Weight Management. When she is not busy teaching and writing, Susan enjoys spending time with her family, cooking and gardening.
