Ingredients
- 6 scoops Herbalife Nutrition Protein Baked Goods Mix
- 6 scoops Herbalife Nutrition Formula 1, Banana Caramel
- 3 TBSP dark cocoa powder
- 59 ml (1/4 cup) flour (preferably white whole wheat/whole wheat pastry flour)
- 1/2 tsp baking soda
- 118 ml (1/2 cup) low-fat milk
- 2 medium bananas (very ripe)
- 2 eggs
- 3 TBSP vegetable oil (such as canola, safflower, sunflower)
- 59 ml (ÂĽ cup) mini chocolate chips
- 1 additional small banana for topping, peeled and sliced into ½ inch rounds (optional)
Instructions
- Preheat oven to 350 degrees.
- Prepare a 4” x 8” loaf pan: spray generously with nonstick pan spray or wipe with oil.
- In a medium bowl, whisk the Protein Baked Goods Mix, Formula 1, Banana Caramel, cocoa powder, flour, and baking soda.
- In a blender, mix the low-fat milk, the two medium bananas, eggs, and oil.
- Pour liquid ingredients over dry ingredients and stir with a fork until all dry ingredients are incorporated. Batter should be thick. Stir in chocolate chips.
- Spread batter in prepared pan and smooth the top. If using the additional banana on top, arrange banana slices in an overlapping fashion on top of the loaf and press them down gently into the batter.
- Transfer pan to the oven and bake for 55 minutes, tenting loaf with foil after 30 minutes of baking to prevent the top from over-browning. Top of loaf should spring back when touched gently with your finger, and a toothpick inserted into the loaf should come out clean.
Transfer pan to a cooling rack and allow loaf to cool completely before removing from the loaf pan.
*Note: For the bananas on top, it’s recommended that you arrange some overlapping slices on top. Also, be sure to use the right size pan – bread pans can vary.
Makes 1 loaf or 12 slices.
