Festive Bundt Cake

  • 1 serving (40 g) Herbalife Nutrition Tri Blend, Coffee Caramel*
  • 1 serving (26 g) Formula 1, Spiced Apple*
  • ½ serving (14 g) Protein Drink Mix
  • 75 g (1 cup) rolled oats
  • 50 g (1/2 cup) ground almonds
  • 25 g (1/4 cup) unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 4 eggs
  • 200 g (3/4 cup) unsweetened apple sauce**
  • 100 ml (7 TBSP) avocado oil or sunflower oil
  • ½ serving (14 g) Herbalife Nutrition Protein Drink Mix
  • ½ serving (13 g) Formula 1, Vanilla Cream*
  • 75 (1/3 cup) ml water
  • 15 g (2 TBSP) toasted nuts (roasted peanuts used)
  • Preheat the oven to 180°C or 160° Fan/350°F, Gas Mark 4.
  • Brush a Bundt tin well with avocado oil.
  • Place the Tri Blend, Formula 1 Spiced Apple, and Protein Drink Mix into a mixing bowl.
  • Blend the oats in a liquidizer and blitz until ground into a flour. Take one TBSP of the ground oat flour out and dust them into the oiled tin, then pour the excess into the mixing bowl with the Herbalife products. Add in ground almonds, cocoa powder, baking powder, cinnamon, and ginger. Use a hand whisk to mix the dry ingredients.
  • Now whisk the eggs in a separate bowl and mix in the unsweetened apple sauce and the avocado oil. Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix well to bring to a thick cake batter.
  • Tip the mixture into the prepared Bundt tin and place in the lower part of the oven to bake for 45-50 minutes until it feels dry and springy to the touch. You can check it with a skewer which should come out clean when you insert it into the cake.
  • Now carefully tip the cake out onto a plate, removing the tin, then let the cake cool.
  • Make the drizzle topping for the cake by placing the Protein Drink Mix and the Formula 1 Vanilla Cream into a bowl and stir to mix. Add in 50 ml (a few TBSP) of the water and mix well to a thick paste then add enough water to bring it to a thick drizzling consistency.
  • Once the cake has cooled you can drizzle the topping back and forth all-round the top then with scatter the chopped toasted nuts.
  • Stick a sparkler or two into the cake and light them up for some extra festive drama.

**To make your own unsweetened apple sauce, peel then quarter 2 apples and remove the core from each piece. Cut the apples into chunks then place in a small saucepan with 2 TBSP of water and cover with the lid. Cook over a low heat for 20 minutes until the apples are completely tender and have cooked to a pulp. Set aside and cool. Weigh 200 g for this cake.

Bowerman earned a B.S. in Biology with distinction from the University of Colorado and an M.S. in Food Science and Nutrition from Colorado State University.
