Developed by our team in Europe, it’s a perfect German-inspired dish for those cold, wintery nights.

Ingredients
  • 2 TBSP extra virgin olive oil
  • 1 large onion, diced
  • 2 cloves garlic, crushed
  • 1 red chilli, diced
  • 1 5 cm (2-inch) piece of ginger, peeled and grated
  • 1 stick lemongrass, trimmed, outer leaves discarded, then finely sliced
  • 1 small pumpkin or 1 large butternut squash (approx. 1 kg (2 pounds) in weight altogether), peeled, deseeded and cut into roughly 3 cm pieces
  • 400 ml (1 2/3 cups) low fat coconut milk
  • 750 ml (3 cups) chicken or vegetable stock
  • 1-2 TBSP fish sauce
  • 2 servings (52 g) Formula 1 Savoury, Mushroom and Herbs flavour*
  • 2 servings (24g) Formula 3 Personalized Protein Powder
  • 1 small bunch basil, shredded
Instructions
  • Place a large saucepan on a high heat and add the extra virgin olive oil.
  • Add the onion, garlic, chilli, ginger, lemongrass and pumpkin, season with salt and pepper, turn the heat down to low, cover and cook for about 10 minutes till the squash is almost tender.
  • Add the coconut milk and the stock, bring to the boil and cook for 5-8 minutes more, until the pumpkin is completely tender.
  • Remove from the heat then add the Formula 1 Savoury and the Personalized Protein Powder and liquidize until smooth and return to the pan.
  • When ready to eat, reheat the soup gently if its cooled down, season with fish sauce to taste, adding a little more stock to thin it out if you wish. Sprinkle with basil, then serve.
  • This soup will keep covered in the fridge for a few days. Reheat thoroughly to serve. It can also be frozen for a few months.

Susan BowermanM.S., R.D., CSSD, CSOWM, FAND – Sr. Director, Worldwide Nutrition Education and Training

Susan Bowerman is the senior director of Worldwide Nutrition Education and Training at Herbalife. She also serves as the Vice Chair of the Dietetic Advisory Board (DAB). As a registered dietitian, she educates distributors about our global nutrition philosophy and is responsible for developing nutrition education and training materials. Bowerman earned a B.S. in Biology with distinction from the University of Colorado and an M.S. in Food Science and Nutrition from Colorado State University. She is a fellow of the Academy of Nutrition and Dietetics and holds two board certifications as a specialist in Sports Dietetics and in Obesity and Weight Management. When she is not busy teaching and writing, Susan enjoys spending time with her family, cooking and gardening.
