Festive Fruit Swirls

Ingredients
  • 250 g (2 cups) strong wholemeal flour
  • 250 g (2 cups) strong white flour
  • Half teaspoon salt
  • 1 serving (40 g) Herbalife Nutrition Tri Blend, Coffee Caramel or Banana*
  • 1 serving (26 g) Herbalife Nutrition Formula 1, Cookie Crunch or Spiced Apple flavor*
  • 150 ml (2/3 cup) boiling water
  • 50 g (2.5 TBSP) butter (unsalted)
  • 150 ml (2/3 cup) milk, or plant-based drink
  • 7 g dried yeast or 15 g fresh yeast
  • 2 eggs
  • 250 g (1 ½ cups) sultanas or raisins
  • 250 g (1 ½ cups) chopped dates
  • 1 TBSP finely grated fresh ginger
  • 2 1/2 tsp of ground cinnamon
  • 1 tsp finely grated orange zest
  • 50 ml (3 TBSP) orange juice
  • 1 ½ tsp Herbalife Tea, Lemon*
Instructions
  • Place the wholemeal and white flour in a mixing bowl or the bowl of a stand mixer and add in the salt, the Tri Blend Banana, and the Formula 1 Cookie Crunch and mix.
  • Place the boiling water in a bowl or jug and add in the butter and stir, then add in the cold milk. The liquid should now be lukewarm. Add in the yeast (if you are using Easy Bake yeast, add it to the flour instead) and stir to mix.
  • Whisk the 2 eggs and add into the liquid.
  • Now pour the wet ingredients into the dry ingredients and mix well and knead, either by hand or in the machine with the dough hook for 7-10 minutes until the mixture is smooth and slightly springy to the touch. It’s not necessary to add extra flour while kneading the mixture.
  • Once the dough has been kneaded, place it in a mixing bowl (or keep it in the bowl of the stand mixer) and cover the bowl with a plate or cling film, place somewhere warm in your kitchen, not above 45°C / 115°F, for about 2 hours, or until light and doubled in size.
  • Just before the dough is ready to work with, make the filling. Place the sultanas or raisins in a bowl and add the chopped dates, ginger, cinnamon, orange zest, orange juice, and the Herbalife Tea. Mix well then set aside.
  • Uncover the dough and knead it to knock it back, just for 2 minutes.
  • Now cut the dough into 2 equal parts and roll each one (keeping the other covered while waiting to be rolled), with a dusting of flour, into a long rectangle, about 50 cm / 20 in x 25cm / 10 in.
  • Now spread half of the dried fruit filling all over the rectangle of dough and starting at the long end (rather than the shorter end) roll the dough away from you so that you have one long roll. Cut into slices about 2 – 2 and a half centimeters / 1 inch wide then place, cut side up, slightly spaced apart on parchment paper lined baking trays. Squash them down a little so that they’re about 1 and a half centimeters / ½ inch thick then cover with cling film or a light tea towel and place somewhere warm for about 20 minutes until light and slightly puffed up.
  • Bake in an oven preheated to 180°C / Fan 160°C / 350°F Gas 4 for about 18-20 minutes until golden brown. They’ll sound hollow when tapped on the base.
  • Allow to cool slightly then dust with icing sugar to serve.

These can be frozen while they are still raw before being risen for the second time before baking. This recipe can be halved easily. You can also add some chopped candied peel or dried cranberries as part of the dried fruit weight.

Susan Bowerman is the senior director of Worldwide Nutrition Education and Training at Herbalife. She also serves as the Vice Chair of the Dietetic Advisory Board (DAB). As a registered dietitian, she educates distributors about our global nutrition philosophy and is responsible for developing nutrition education and training materials. Bowerman earned a B.S. in Biology with distinction from the University of Colorado and an M.S. in Food Science and Nutrition from Colorado State University. She is a fellow of the Academy of Nutrition and Dietetics and holds two board certifications as a specialist in Sports Dietetics and in Obesity and Weight Management.
