Ingredients
- 275 g (2 1/3 cups) sifted wholemeal flour (weigh when sifted)
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1/2 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 1 serving (40 g) Herbalife Nutrition Tri Blend Select, Coffee Caramel*
- 1 serving (7.5 g) Herbalife Nutrition Beta Heart*
- 1/2 tsp (1.7 g) Herbalife Nutrition Instant Herbal Beverage, Lemon*
- 100 g butter (4 ounces/1 stick) (unsalted)
- 100 g (1/3 cup) pomegranate molasses (you can use treacle)
- 40 g (1/4 cup) dark brown sugar
- 1 large egg
- 75 g (3/4 cup) icing sugar
- Few drops of water or lemon juice
Instructions
- Preheat the oven to 180°C / 160°C / 350°F, Gas Mark 4.
- Place sifted flour in a bowl with ginger, cinnamon, bicarbonate of soda, baking powder, Tri Blend Select, Beta Heart, and Herbalife Instant Beverage. Mix well with a whisk.
- Place butter in a saucepan with molasses and brown sugar over a medium heat and allow it to melt. Whisk the egg in a bowl and mix in the butter and molasses mixture.
- Make a well in the center of the dry ingredients and pour in the liquid and mix to bring the dough together. Now using a floured worktop, roll the dough out until it is just a half cm thick, dusting flour on top and using a palette knife to slide underneath to stop it sticking.
- Use a template to cut the dough into gingerbread men, bringing the scraps together and re-rolling.
- Place on a parchment paper lined baking tray and bake for 18-20 minutes, or until they feel dry to the touch in the center.
- Remove from the oven when baked, allow to sit in the baking tray for a couple of minutes then transfer to a cooling rack.
- To decorate the gingerbread men, mix the icing sugar and enough water or lemon juice to make an icing of drizzling consistency. Ice eyes and buttons etc or drizzle the icing over the top. Once set, dust with a little icing sugar to serve.
