Ingredients
  • 2 scoops Herbalife24 Rebuild Strength, Chocolate
  • 2 cups quick-cooking oats
  • 1/2 cup raw pepitas (hulled pumpkin seeds)
  • 1/4 cup flaxseeds
  • 1/2 cup sliced almonds
  • 1/2 cup chopped raw pecans or walnuts
  • 1 tsp ground cinnamon
  • 1/2 tsp fine sea salt
  • 118 ml (1/2 cup) maple syrup
  • 236 ml (1 cup) creamy peanut butter or almond butter
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened shredded coconut
  • Optional: up to 1/3 cup of nonfat milk or nondairy alternative as needed to form dough
Instructions
  • Mix Rebuild Strength (Chocolate) with the oats, pepitas, flaxseeds, almonds, and pecans in a large bowl. Add cinnamon and salt, mixing all the ingredients.
  • Whisk maple syrup, peanut butter, and vanilla extract in a separate bowl.
  • Combine both mixtures into a dough, ensuring every oat is well coated. Add milk as needed if the dough is too dry.
  • Arrange shredded coconut in a small bowl and prepare a freezer bag or airtight container for refrigerating the protein balls.
  • Take about one TBSP of dough and roll it between your palms. Roll the ball in shredded coconut and place it in the container. Repeat the process, spacing out the balls.
  • Cover and refrigerate the balls for at least one hour.

Susan Bowerman is the senior director of Worldwide Nutrition Education and Training at Herbalife. She also serves as the Vice Chair of the Dietetic Advisory Board (DAB). As a registered dietitian, she educates distributors about our global nutrition philosophy and is responsible for developing nutrition education and training materials. Bowerman earned a B.S. in Biology with distinction from the University of Colorado and an M.S. in Food Science and Nutrition from Colorado State University. She is a fellow of the Academy of Nutrition and Dietetics and holds two board certifications as a specialist in Sports Dietetics and in Obesity and Weight Management. When she is not busy teaching and writing, Susan enjoys spending time with her family, cooking and gardening.
