High-Protein Parmesan and Seed Bread

Ingredients
  • 1 cup Herbalife Nutrition Protein Baked Goods Mix (105 g)
  • 1 cup rolled oats, whirled in the blender into a flour (measure oats first, then blend)
  • 1 cup flour – white whole wheat preferred, or all-purpose flour
  • 3 TBSP finely grated parmesan cheese
  • 1 1/4 tsp salt
  • 2 tsp baking soda
  • 1/2 tsp onion powder
  • 3/4 tsp garlic powder
  • 3 eggs
  • 1/2 cup plain, nonfat Greek style yogurt
  • 1 cup water
  • 3 TBSP olive oil
  • 1 tsp poppy seeds
  • 1 tsp sesame seeds
Instructions
  • Preheat oven to 350° F (177° C) degrees
  • Spray a 8” x 4” loaf pan with pan spray, or wipe with oil
  • In a medium bowl, stir together PBGM, oats, flour, parmesan, salt, baking soda, onion powder and garlic powder.
  • In another bowl, whisk together eggs, yogurt, water and oil.
  • Pour wet ingredients over dry and stir with a rubber spatula just until combined. Batter will be thick.
  • Spread batter in prepared loaf pan, smoothing the top. Sprinkle with poppy and sesame seeds, pressing gently to help them adhere.
  • Bake about 40 minutes until top is lightly browned toothpick inserted into loaf comes out clean.
  • Let cool in pan for 5 minutes, then remove from baking pan and transfer to a wire rack to cool completely.

Susan Bowerman is the senior director of Worldwide Nutrition Education and Training at Herbalife. She also serves as the Vice Chair of the Dietetic Advisory Board (DAB).
