Ingredients
- 4 scoops Herbalife Formula1, Strawberry Cheesecake
- 4 scoops Herbalife Protein Drink Mix, Vanilla
- 3 TBSP flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 1 TBSP vegetable oil such as safflower or canola
- 236 ml (1 cup) & 1 TBSP low fat milk
- 2 scoops Herbalife Formula 1, Strawberry Cheesecake
- 3 TBSP water
- 3 TBSP reduced fat cream cheese
- 1/4 cup plain, Greek style yogurt
- 9 strawberries, sliced
Instructions
- For Pancakes: Preheat the griddle, if using.
- In a medium mixing bowl, whisk together 4 scoops Formula 1, 4 scoops Protein Drink Mix, flour, baking powder, and salt.
- In a separate bowl, whisk together eggs, oil, and milk.
- Pour wet ingredients over dry and whisk until combined. (It’s okay if a few small lumps remain in the batter; avoid overmixing.)
- Make pancakes by pouring ÂĽ cup of the batter onto the preheated griddle (or in a greased skillet heated over medium heat), working in batches if necessary to create 9 pancakes altogether.
- When pancakes are browned on the underside, turn and cook until the second side is brown, and the pancakes are cooked through. Transfer to a plate and set aside while you make the filling.
- For filling: Whisk 2 scoops Formula 1 with water until smooth. Add cream cheese and yogurt, and continue whisking until completely smooth.
- To assemble: For each serving, place one pancake on a plate, and top with about 1 TBSP of filling, then top with one sliced strawberry. Continue stacking pancakes, filling, and strawberries until you have used 3 pancakes, about a third of the filling, and 3 strawberries. Repeat for the other two servings.
Makes 9 pancakes.
