Strawberry Lemonade Protein Bars

Ingredients
  • 1/2 cup rolled oats
  • 1/2 cup almond flour or almond meal
  • 4 scoops Herbalife Protein Drink Mix, Vanilla
  • 1 tsp baking powder
  • 1 medium banana
  • 5 eggs
  • 118 ml (1/2 cup) lemon juice
  • Zest of one lemon
  • 6 scoops Herbalife SKIN Collagen Beauty Booster
  • 4 scoops Herbalife Protein Drink Mix
  • 3 TBSP plain nonfat Greek-style yogurt
Instructions
  • Preheat oven to 350 degrees. Spray an 8 x 8 baking dish with pan spray.
  • For crust: Whirl oats in the blender or food processor until finely ground. Add almond flour, Protein Drink Mix, baking powder, and banana and pulse in the food processor until crumbly and starts to hold together. Transfer to prepared baking dish and press mixture with damp hands or the back of a fork into an even layer. Bake for 10 minutes.
  • While crust is baking prepare filling: In a medium bowl or blender whisk together eggs, lemon juice, lemon zest, Collagen Beauty Booster, Protein Drink Mix, and yogurt until smooth. When crust has baked for 10 minutes, pour filling mixture over crust, return pan to oven, and bake for an additional 20-22 minutes until filling is just set and starting to brown around the edges.
  • Remove from the oven and let cool on a wire rack for 30 minutes, then transfer to the refrigerator to cool completely.
  • Cut in 9 bars. Dust with powdered sugar, if desired.

Susan Bowerman is the senior director of Worldwide Nutrition Education and Training at Herbalife. She also serves as the Vice Chair of the Dietetic Advisory Board (DAB). As a registered dietitian, she educates distributors about our global nutrition philosophy and is responsible for developing nutrition education and training materials. Bowerman earned a B.S. in Biology with distinction from the University of Colorado and an M.S. in Food Science and Nutrition from Colorado State University. She is a fellow of the Academy of Nutrition and Dietetics and holds two board certifications as a specialist in Sports Dietetics and in Obesity and Weight Management. When she is not busy teaching and writing, Susan enjoys spending time with her family, cooking and gardening.
