Veggie Rolls

  • 2 TBSP extra virgin olive oil
  • 450 g (6 cups) sliced mushrooms
  • 1 clove of garlic, chopped
  • 3 tsp ground cumin
  • 50 g (1/2 cup) ground almonds
  • 1 TBSP chopped fresh parsley (or coriander)
  • 1 serving (26 g) Herbalife Nutrition Formula 1, Savoury Mushroom and Herbs flavor*
  • ½ serving (6 g) Herbalife Nutrition Personalized Protein Powder
  • Salt and pepper
  • 250 g (9 ounces) puff pastry (vegan puff pastry if you wish)
  • 1 TBSP sesame seeds
  • Pour the olive oil into a frying pan over high heat and allow it to get hot. Add in the sliced mushrooms and sauté them until golden and wilted. Tip in the chopped garlic and the ground cumin, stir over the heat for a few more seconds, then take off the heat and allow to cool.
  • Tip the sliced mushrooms into a food processor and add in the ground almonds, chopped parsley or coriander, Formula 1 Mushroom and Herb, and the Personalized Protein Powder. Blend well until you have an almost smooth puree. Season to taste with some salt and pepper.
  • Take the mixture out of the food processor and shape into 2 long sausages, each one measuring about 32 cm (12 inches) long, about 2 cm (1 inch) in diameter! (If you want to make a gluten-free veggie “sausage” then you can shape mini cocktail sausages and cook them in a little olive oil in a pan with the mushroom mixture — this is good if you have some gluten-intolerant guests coming!)
  • Now roll the puff pastry, just 3 mm in thickness, into a large rectangle 32 cm x 20 cm (12 x 8 inches), then cut it in half into 2 thin rectangles, each measuring 32 cm x 10 cm (12 x 4 inches).
  • Lay one rectangle in front of you with the longest side closest to you and away from you, and lay one of the “sausages” along the center of the pastry, running parallel to the long sides of the pastry. Brush the far end with a little water or egg wash** and then roll the ‘sausage’ in the pastry so that it is covered completely, sticking the pastry at the end of the roll with the watered end. Place the join on the bottom and brush the top of the pastry with water or egg wash then scatter with half of the sesame seeds. Now cut the long ‘sausage’ roll into small pieces, getting about 8 or 10 per roll.
  • Repeat with the second half of the mushroom filling and pastry.
  • Bake in an oven preheated to 200°C (400°F) for 20-25 minutes until golden brown.
  • Dip into your favorite sauce, like sweet chili sauce, soy sauce, or ketchup.
